This Wednesday begins the Lenten season and as a Catholic that means no meat on Fridays. I am really not a lover of fish and I am not really good at cooking it, so most Fridays we will eat dinner at our local Parish. The men of our Church host Fish Fry's during Lent and they are much better at cooking fish then I am.
So, here's what's on the menu for this week.
Monday:
Chicken Florentine Gnocchi
Tuesday:
Pulled Pork Sweet Potato
Wednesday: Ash Wednesday
Since Ash Wednesday is a day of fasting, I will only eat one meal and that will be after services on Wednesday night. I plan on making some of my favorite Egg Salad. I'll post the recipe in a few weeks.
Thursday:
Honey Lemon Garlic Chicken- This is a huge family favorite for us and one my girls are always happy to see on their plates. I serve this with brown rice and steamed veggies. It's fantastic!
Friday:
Parish Fish Fry
Saturday:
Teriyaki Chicken Kabobs
Sunday:
Beef Fajitas with all the fixins
