Meals on Monday- Week 3

I can't believe it's already Monday. Weekends just aren't long enough. This week is going to be a pretty busy one, so the meal plans are going to be pretty simple. Also, my brother's family is coming into town this week, so I will only be posting four meals, because we will be spending lots of time at my parents house. Besides, can you think of a better place to eat then your mama's table?...I can't.

Before we get to the recipes, here is our beautiful kitchen for the week. This cute kitchen closely resembles my kitchen (mine is minus the cute, for now). I really like that they kept the original cabinets which have a lot of character, but they freshened them up with some paint. And the floor is amazing!



So here is what we will be having for dinner this week.

First up is our version of a childhood favorite, The Taco Burger. We had this small franchise restaurant in our town called Taco Tico when I was growing up and this was one of the sandwiches they served. Man, I wish they were still in business.




Here's the recipe we use. I honestly can not remember where we got it from, but my oldest daughter loves them. This is considered a loose meat sandwich. 

Monday

Taco Burgers
- 1 lb of hamburger
- 1 egg beaten
- 1 pckt dry ranch
- 1/4 cup taco sauce
- 1 cup shredded cheese

Mix all ingredients by hand until thoroughly mixed and then place in a warm skillet. Cook the meat until completely done and serve on buttered toasted buns. Finish with shredded lettuce, chopped tomato, shredded cheese, sour cream and additional taco sauce.

Linguine with Shrimp Scampi



Wednesday

Slow Cooker Asian Chicken Lettuce Wraps




Thursday

Pioneer Woman's Beef and Bean Burritos 





From the looks of this weeks meal plan, I must be hungry for some Mexican Food. Honestly, it is one of my families favorites, so I am not surprised that two Mexican recipes managed to sneak into this short week.
