What's for Dinner this week...

Hey Y'all! I know it's been a while since I've done a Meals on Monday, but here we go. 

So, I'm still on my weight loss journey. I am now down 6 pounds which is pretty good. I still can't tell a difference yet, but I'm going to keep on keepin' on. 

One thing that I am vowing to do is eat at home this week and I've pulled some amazing recipes to ensure that we don't go through the drive thru. Here's what's on the menu this week.

Monday

My husband loves this pizza. When I brought it up last week you could see his mouth starting to water. The best part is that with some minimal prep the day before this goes together quickly.

Tuesday 

Crockpot meals are one of my favorite go to's to ensure we don't eat out. In order to access the rest of this week's recipes you will need to have a subscription to Dashing Dish. I highly recommend it and it's extremely affordable. Kate and her team have recently updated the Menu Planning Calendar and now it's even better.

I have a couple friends coming over for a cooking day for one of the companies that I handle the marketing for. We are creating six new recipes, so there will be a small buffet for dinner. Oh, did I mention it's all-natural Black Angus. Now my mouth is watering.

We will more than likely be leftovers and then I'll head back to the grocery store for next week.

Meals On Monday- Cinco de Mayo Edition

I can't believe that it's May already. There are so many things to love about May, beautiful weather, the end of school drawing near and Cinco de Mayo.

Here's what's on the menu for our Cinco de Mayo dinner.

I am addicted to Chili's salsa and this year I am going to try to recreate it at home. I searched Pinterest and there are several copy cat recipes, but this is the one I decided to try.

 
 
I also love 7 Layer Dip and I only tend to make it once a year. This year I am making this version. It looks delicious!
 
 
The last recipe is one that I have been looking forward to for quite some, but for some reason I just haven't made it yet. This recipe is out of Shana Niequist book Bread & Wine- Annette's Enchiladas.
 

 

 Mexican food is amazing all year long, but it is mandatory for Cinco de Mayo. I love the vibrant flavors in this style of food and it makes we wonder about the beautiful kitchens of Mexico. I found this one on Pinterest and I thought it was gorgeous.

Meals on Monday- Spring Time Salads

One of my favorite go to meals for spring and summer are salads. They are easy to put together, can be prepped ahead of time and are quick. Here are a few that I plan on incorporating into my meal plan for the week.

The first two are from one of my favorite Food Bloggers and Pinners, Ali at Gimme Some Oven. One of my favorite things about Ali is that she is located in Kansas City, which is very close to my little town. Her food photos are always so beautiful!


 
 
 
 
This next salad is one of my favorite. It's wonderful just the way the recipe shows it and even better if you add a grilled chicken breast.
 
 
 
The last salad is one that I automatically associate with Spring and that is a good ol' Chicken Salad Sandwich. I like this recipe because of the addition of the sour cream and the dill.

Meals on Mondays- Favorite Cooking YouTube Channels

Hey Y'all! I love a good YouTube video and although my feed is usually made up of Beauty and Makeup channels, recently I have found a couple Food channels that I really enjoy.

I really do better during the week if I prep some healthy meals and snacks on the weekend. This first channel has some amazing Weekly Meal Prep ideas. Check out The Domestic Geek. Here is a link to my favorite weekly meal plan of hers.

 
Sara Lynn's videos are very well done and she post on a regular basis, which I really like. She also has some really awesome series on smoothies and salads. Her meal prep ideas are very family friendly and healthy.
 
 
The next YouTube channel that I really enjoy is Entertaining with Beth. Beth's recipes are geared more towards entertaining, but are also simple enough to be incorporated into your weekly meal plans. Here is my current favorite video of Beth's.
 
 

 Beth also has a new Garden channel that she recently started. Her garden is beautiful and she even demos some recipes that she creates with items out in her garden.
 
I would highly recommend checking both of these YouTube channels out and subscribing to them. You won't be disappointed.

Now onto this week's Beautiful Kitchen. I have forgotten to share this portion of Meals on Monday in the last few posts, so I wanted to make sure and include one today. This kitchen belongs to Miss Mustard Seed. I love the butcher block countertops, the white cabinetry and chalkboard wall.

Meals on Monday- Freezer Cooking

Hello Everyone! I hope you had a great Easter. I took a few days off to enjoy some family time.

Today, I want to share one of the coolest plans that I have come across on Pinterest. Ruth from Living Well Spending Less has the created an awesome plan to create 10 Freezer Meals in one hour. I know it sounds crazy, but it really goes smoothly if you follow her prepping steps.

Here are the recipes that Ruth has put together for this plan. They are all wonderful and are very family friendly.


  • Honey Lemon Garlic Chicken
  • Oh-So-Easy London Broil
  • Quick & Easy Taco Soup
  • Orange Glazed Pork Chops
  • Creamy Italian Chicken

  • You end up making two of each of the above meals, which is great because you have one for that week and then already have five meals for your freezer. 


    Ruth also has an awesome Sunday Prep plan where you can make the above meals, plus a week's worth of breakfast, lunches, do some laundry and a quick speed clean of your house. I love this plan and feel like a Rock Star once I complete it. If you have time on a Sunday, give this a try you won't be disappointed.

    Meals on Monday- Favorite Food Bloggers

    Good Morning and Happy Monday! This week is Holy Week, which means that we will have multiple church services to attend. With that being said, our dinners this week will be pretty simple. 

    Monday: Hot Dogs and Pasta Salad
    Tuesday: Tacos and Cheesy Mexican Rice
    Wednesday: Spaghetti, Side Salads and Breadsticks
    Thursday: Eating out at Subway before Church
    Friday: Cheese Pizza from our local Pizzeria before Church

    Because my meal plan this week is a little boring, I thought I would share some of my favorite Food Bloggers with you. These are the sites that I  go to when planning out our weekly meals. Some are healthy, some are comfort food and some are a mixture, but none of them will disappoint. 

    First up....The Pioneer Woman. My mom and I were lucky enough to meet Ree a couple years ago at a book signing. She was as lovely in person as she is on Food Network. 


    The next blogger is one that I have been raving about recently and that is Katie Farrell. Katie  is amazing and she offers a lot of her recipes free on her blog, but she also has a subscription portion of the blog where you can access many more wonderful recipes for only $5.00 a month.


    The last blogger is actually one that I just recently found, but her recipes look amazing. Shelia blogs over at Eat 2 Gather. She also shares her weekly meal plans on Monday, so stop by and check her out. 


    Now for this week's Beautiful Kitchen...I thought it would be fitting to show you one of these amazing bloggers kitchens and I chose Ree's. This photo is of the Lodge Kitchen where she films her Food Network Show. I love the open concept floor plan and the amazing amount of space. This kitchen is rustic and beautiful.

    Meals on Monday- Lunches

    Well last week we talked about what some of my go to breakfast recipes are, so I thought we would talk about my favorite lunch recipes this week.

    Before we get started here is a quick update on my weight loss. I am now down a little over 10 pounds and have about 30 more pounds before I reach my goal. I am striving to lose 1 to 2 pounds a week so it will be a process, but I'm pleased so far.

    Now onto the recipes...

    The first one is a copy cat of one of my favorite fast foods. I love the original from Taco Bell, but this is a great alternative and can be made in the crock pot.

     
    Probably one of my favorite go to lunches is a wrap. They are easy to assembly ahead of time and they are easy to transport. Here is one of my favorites.
     
    
     
    The last recipe is one that I eat quite frequently during Lent on Fridays. I love Egg Salad and add lots of dill to mine.

    Meals on Monday- Breakfast

    Did your mother or grandmother ever tell you that Breakfast was the most important part of the day? As I am on my weight loss journey, I am realizing that when I eat a good healthy breakfast, I am more likely to stay on track for the remainder of the day. When I skip breakfast or don't have a plan, then I tend to make unhealthy choices at lunch and dinner.

    With that being said, I thought I would share a few healthy breakfast  recipes with you.

    First we will start with my favorite on the go breakfast. 

    Chocolate Peanut Butter Protein Shake

    but the recipe is the same minus the candy pieces

    Here's the recipe:


    • 1 cup fat-free cottage cheese
    • 2 scoops of vanilla protein powder (I use Designer Whey and I love it)
    • 2 tablespoons unsweetened cocoa powder
    • 4 to 6 stevia packets
    • 3/4 cup to 1 cup water (alter according to desired consistency)
    • 8 - 12 ice cubes 
    1. Put everything in a blender, and blend until creamy consistency is reached. Enjoy!

    NUTRITIONAL BREAKDOWN: 2 servings; 360 calories per serving

    ( Sometimes I add a banana to the recipe and it literally tastes like one of my favorite milk shakes.) 


    Banana Bread Muffins

    One of my husbands favorite breakfast items is Banana Bread. His mother has the best recipe, but it is much higher in calories. This is a great way for us to still enjoy banana bread,but with a healthier recipe.  



    Strawberry Protein Pancakes with Yogurt Filling

    On the weekends, I like to take a little extra time and make something that my girls would really enjoy. They both love pancakes and yogurt and this recipes incorporates both.

    Here's a quick update on where I stand on my weight loss journey. I am currently down about 5 pounds and really proud of my accomplishments so far. I have gotten a little off track for the last week or so, but I am making a real point to get back on track this week.

    Meals on Monday- Slow Cooker Recipes

    Hey Y'all! Wow, what a day! I still have not gotten use to this time change yet. We had a really busy weekend and so my post is a little later than usual today. 

    This week is a crazy one...full of meetings and other activities. I have been doing pretty good at tracking my calories, but started to track less frequently over the weekend.

    Since it's such a busy week, I thought I would rely on my slow cooker to help me stay sane. 

    So let's get started!

    The last recipe is not a slow cooker recipe, but it is a 15 minute meal: Shrimp Fried Rice.

    Meals on Monday- Tomorrow has Arrived

    Hey Everyone! Today’s Meals on Monday will start shortly, but I wanted to give you some background thoughts before we get started. This past week, I finished up Jeanne Oliver’s Becoming –The Unfolding of You and one of the  stories really spoke to me and my struggle with my weight.

    Karianne Wood from Thistlewood Farm shared her testimony and her weight loss journey. I identified with her story on so many levels: acting like I don’t notice that I am overweight, promising myself that I will start eating healthy tomorrow, telling myself that I will only live on cucumbers and broccoli and will never eat another brownie. Everything she was saying, I had told myself before. 

    Karianne reminded me that our bodies are temples and are gifts from God. We need to respect them and take care of them. She encouraged me to stop putting off tomorrow.  I called a friend who has already lost over 100 pounds and asked her to be my mentor and support person. She very happily agreed. I also downloaded MyFitnessPal  app and ordered a Fitbit Charge to help track my progress and calories burned. And more importantly, I have asked my Heavenly Father to come on this journey with me.

    So, I spent the weekend planning out Healthy Meals. I had previously purchased and blogged about two new books that are written by Katie Farrell, creator of Dashing Dish. I took out those books, joined the subscription program of her website for $5 (which I thought was extremely reasonable) and vowed to plan out my meals for the following weeks and stick to them.

    All of this week’s meals come from Dashing Dish’s subscription website or from her cookbook Dashing Dish.

    Meals on Monday- New Cookbooks

    Hi Everyone! Well, I have had some computer issues this week, so today's Meals on Monday will be a short one. I haven't had a chance to really plan anything new out for this week, so I thought I would share some of the cookbooks that I am currently considering purchasing. 

    The first is one that I have seen a lot of my favorite bloggers share and endorse. 



    The next cookbook is a family friendly one and focus on whole foods.



    The last book is one from Williams & Sonoma and I always love their cookbooks.



    Here is this weeks Beautiful Kitchen. This gorgeous kitchen was designed and created by Joanna Gains in the second season of Fixer Upper. I love the range hood and all the wood accents. 



    Hopefully my computer will be back up soon and we can get back to normal.
